About this deal

The aromatic herbs and spices used in the creation of Noilly Prat Original Dry include Roman chamomile and gentian from France, nutmeg from Indonesia and bitter orange from Tunisia.

However, in 2009, the extra-dry Noilly recipe exported to the USA was replaced by the original dry formula used worldwide. It was to mimic this natural process that Joseph Noilly, in 1813, designed a process that made France's first vermouth. The Noilly Prat company is based in Marseillan, in the Hérault department of southern France (it lies some 50 km west of Montpellier) and exclusively use white grape varieties grown in the Marseillan area. Before steamships wines were transported over long distances around the world by sail, barrels subjected to varying temperatures and humidity over many months giving them a unique character, in the age of steam, wines lost this character - faced with this Louis Noilly began to age his wines in the open air on land to recreate conditions on board a ship - this technique was so successful it is still used at Noilly Prat today.

Tours explain the production process, and end with a tasting of the vermouths and cocktails made with them. An aromatic blend of herbs and spices sourced from all over the world are used to gently infuse the wines and create the unique bouquet and wonderful taste of Noilly Prat. Our transit boxes are designed to withstand most things, but wine does however sometimes break in transit. In 1855, his son Louis Noilly and son-in-law Claudius Prat set up the company that became Noilly Prat, moving the business to Marseillan where it remains to this day.

The blend is transferred to large casks and a secret blend of 20 botanicals (including Roman chamomile, yellow gentian, nutmeg, and bitter orange) is added by hand each day in a gentle maceration lasting 3 weeks, after filtration, the wines rest for 6+ weeks before bottling. I always use this particular dry white vermouth, which should be pronounced along the lines of “Noiyeeh Prat” but which is familiarly known in my house as Nolly. It is the perfect blend of dry white wine and aromatic herbs, giving it a deliciously complex taste that really makes any drink incredible. Nothing in these terms of sale affects your statutory rights (including your right to receive a refund in respect of any defective product we sell to you).It makes for a mean martini and, in good time for Summer, I must share with you one of my favourite drinks for when it’s hot: pour a generous amount of Noilly Prat into a glass, tumble in ice cubes, top up with soda water or fizzy mineral water, and drop in a few fresh mint leaves. If you do require precise ingredient information you should consult the manufacturer, whose contact details will appear on the packaging or label. A white wine based vermouth, made with two wines which are matured separately for a year before a secret selection of herbs and spices are macerated for three weeks, then carefully extracted.

The wine stays in these casks for 8 months, maturing and absorbing the flavour of the wood, before being transferred to smaller oak barrels which are taken outside and left for a year. Surrounded by the sun-drenched vineyards that overlook the Mediterranean Sea and its famous oyster farms, our home is like no other. I don’t drink wine on an everyday basis, and so I tend not to have an open bottle hanging about that I can use in cooking.

Fortified, mellowed and flavoured with herbs and spices, it doesn’t – unlike wine – need to be cooked out patiently to give a smooth, rich wineyness: the impact is near-instant. To taste the dry white wine emerges, with a complex yet delicate bitter finish laced with a touch of spice. Noilly Prat vermouth is handcrafted in the Languedoc region of the south of France using only Blancs de Blancs wines made from the local Picoult and Clairette grapes.
